4 quick pasta sauces

Salsa Verde

Based on Jamie Oliver’s recipe

Serves 4 Adults

Ingredients

  • 350g of dried pasta (Fusilli is great for babies)
  • 1 medium bunch of fresh mint
  • 1 medium bunch of fresh parsley
  • 1 lemon
  • 3 anchovy fillets
  • 2 teaspoons capers
  • 4 tablespoons of olive oil
  • 1 tablespoon of red wine vinegar
  • 50g of freshly grated parmesan cheese

Method

Cook your pasta as instructed on the packet.

Put your mint, parsley, the lemon juice, anchovy fillets, capers, olive oil and red wine vinegar into a blender and blend until fine. You may need to add a splash of water if it is not mixing well.

Add your sauce to your pasta and enjoy with the grated parmesan on top.

Why not try it with a lovely tuna steak and a rocket side salad.

Prawn and Cherry Tomato

Serves 4 Adults

Ingredients

  • 350g of fresh tagliatelle pasta (you can use dried but it will take longer to cook)
  • 4 garlic cloves, divided
  • 1 tablespoon olive oil
  • 1 pound of good quality prawns (you can use frozen)
  • 100g of cherry tomatoes, halved
  • 200ml of homemade chicken stock (if you use a stock cube for this make sure the salt content is low for babies under 12 months old)
  • 1 lemon, juiced
  • 1 1/2 teaspoons of all-purpose flour
  • 3 tablespoons of butter

Method

If you decide to use dried pasta you will need to start cooking this at the beginning as instructed on the packet. If using fresh pasta you can wait until you have made your sauce.

Heat the olive oil in a large pan.

Crush in the garlic cloves and stir.

Add the prawns and sauté for 2 minutes, stirring occasionally.

Throw in the halved cherry tomatoes to the pan and sauté for 1 minute.

In a separate medium pan combine the chicken stock, lemon juice and flour. Stir very well with a whisk.

Add the stock mixture to the prawns and bring to a boil. Boil for 2 minutes or until slightly thickened.

Simmer on a low heat and gradually add the butter pieces, stirring constantly until butter melts before adding more.

Leave to simmer gently while you cook the pasta as instructed on the packet. Fresh pasta will only take 2-4 minutes to be cooked.

Add the pasta to the sauce and mix together.

Macaroni CheeseDSC_0015

Serves 4 Adults

Ingredients

  • 2 tablespoons of butter
  • 350g of dried pasta (Fusilli is great for babies)
  • 3 tablespoons of plain flour
  • 500ml of whole fat milk
  • 250g of grated cheddar cheese
  • 100g of grated cheddar cheese for topping

Method

Preheat the oven 200C/Gas 6

Cook your pasta as instructed on the packet.

Melt the butter in pan. Stir in the flour until it forms into a thick paste.

Slowly add a little milk at a time, whisking it as you go until lovely and thick.

Take off the heat.

Add the grated Cheese and stir until you have a wonderful cheese sauce.

Add the pasta to the sauce and mix together.

Put this mixture into a medium casserole dish and sprinkle with grated cheese.

Cook in the oven for 20mins or until golden brown on top.

Easy Peasy Tomato

4 Adult Portions

Ingredients

  • 1 Onion
  • 2 cloves of garlic
  • 1/2 bunch of basil
  • 200g bacon lardons
  • 800g of passata
  • 4 tablespoons of balsamic or red wine vinegar
  • 400g of dried pasta (any shape – fusilli is great for little ones to hold)

Method

Cook your pasta as instructed on the packet.

Finely chop the onion then soften with a little olive oil, on a medium heat, in a large pan for about 5 minutes.

Chop the basil and add to the onions with crushed garlic. Stir.

Add the bacon lardons and cook for roughly 8 minutes. Keep stirring.

Add the passata and vinegar. Simmer for 10 minutes.

Add the cooked pasta and stir altogether.
