Are you bored with giving your little one the same sandwiches for lunch? For me, I got into the habit of always giving her soft cheese sandwiches because they were easy. She loves them but we need to start being a little more adventurous.

To make the feta and sesame fritters:
Take 100g of feta and crumble into 1 beaten egg. Add 2 tablespoons of flour and some chopped fresh parsley. Form into a thick paste. Sprinkle sesame seeds into hot oil in the frying pan. Spoon the mixture into the pan and cook on each side for 3 minutes. Serve with grated cucumber and pitta bread fingers.
To make the Spinach and cheese quesadilla:
Wilt the spinach in a frying pan with a little olive oil. Take out the spinach and place into a bowl until needed. Place the frying pan back on a low heat. Put one tortilla wrap into the pan. Sprinkle grated cheddar cheese on top. Sprinkle on the spinach. Place a second wrap on top and press firmly down. Allow to cook for 3 minutes and for the cheese to melt inside, this will fuse the whole thing together. Use a spatula to flip the whole thing and cook for another 2 minutes so it browns. Serve with sweet chilli sauce mixed with yoghurt.
