Vegetable fritters


These fritters are becoming a firm favourite with my little munchkin and my husband. They are so easy to make and you can make different variations and flavours. I have reposted this so that I can show you what other ingredients you can use.  Scroll down to the bottom to see other exciting fritters you can try. My version with UK measurements inspired by mylovelylittlelunchbox:


(makes about 12 small patties)

  • 2 eggs
  • lemon zest
  • 3 tablespoons of plain flour
  • olive oil for frying

Now pick from one of these tasty ideas:

1. Pea and Sweet potato

  • 1 grated sweet potato
  • 100g of fresh grated parmesan
  • 100g of frozen peas
  • 100g of mint

2. Carrot and Sweet potato

  • 1 grated sweet potato
  • 2 carrots grated
  • 100g of fresh grated parmesan
  • 100g of parsley


Add all your chosen ingredients into a large bowl and mix together.


Heat a glug of olive oil in a frying pan. Either use your hands or a tablespoon to make a small patty of the mixture and place it into the hot pan and cook for 3 minutes, flip over and repeat the cooking time.

Once sealed and golden, place the fritters onto a cool plate.

Let them cool and make sure the centre is not too hot when serving to your little one.

Serve with a salad and some tzatziki (Natural Yogurt, Cucumber and Mint dip).
