Our little munchkin loves breakfast omelettes; they are easy for her to pick up, chew and swallow. You can also change up the ingredients to whatever you have lying around in your fridge. I always cut them up into chip-sized pieces so she can pick them up easily.
(Feeds one adult and one baby)
- 3 eggs
- 2 handfuls of baby spinach
- mature cheddar
- olive oil for frying
Chop up the spinach.
Drizzle olive oil into a frying pan.
Fry the spinach on a medium heat until soft and dense.
Beat the eggs in a bowl and then pour into the frying pan. Tip and tilt the pan so the mixture covers the whole surface.
Let the egg cook on a medium heat for 2-3 mins or until it is cooked through.
Place strips of mature cheddar onto half the omelette.
Using a spatula flip over half the omelette to cover the cheese, cook for another minute so the cheese melts then slide onto a plate.
Remember you can substitute the spinach and cheese for other toppings such as red pepper and sweetcorn, cheese and onion, spinach and yellow pepper or just plain cheese.
