Breakfast – Fruit muffins

Blueberry muffins. These are a great fast or on the move breakfast, they even work as a brilliant afternoon snack with a cup of tea. I discovered these on the 100 days of real food website: click here for original recipe.

Ingredients 

(makes about 12 muffins)

  • 300g wholemeal flour
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 2 eggs
  • 1 teaspoon pure vanilla extract
  • 6 tablespoons of coconut oil
  • 200ml fresh orange juice
  • 300g of blueberries (other fruits such as raspberry and apricots also work well)
  • Muffin/Cupcake cases

Method

Preheat the oven 400F/ 200C/ Gas 6

Add the flour, baking powder, ground cinnamon and nutmeg to a large bowl.

Make a small well in the flour, pour the beaten eggs, vanilla extract, coconut oil and orange juice.

Whisk gently all together to make a batter.

Add the blueberries into the mix.

Place 12 muffin cases into a bun tray.

Use a tablespoon to fill the muffin cases about 3/4 full.

Bake in the oven for 15 mins until turning golden brown.

Enjoy with natural yogurt.
